Italian Roast Beef

This is a great, simple roast beef recipe that I came up with this past year.  You can also make it with pot roast and it turns out just as great.  I made this recipe last night for a welcome home dinner for my husband.  He was out of town all week and it coming home to raining weather here.  Thought I would make him a nice home cooked meal.  Please try this with your family....they will eat it up!

ITALIAN ROAST BEEF

  • 3 lb. roast beef
  • 2 TB. olive oil
  • 2 medium sized onions - sliced and quartered
  • 20 mini carrots (cut in 1/2 lengthwise)
  • 1/2 cup mild giardinerra
  • 3 TB. tomato paste
  • 1 1/2  cans beef broth (12 oz. cans)
  • 1  - 12 oz can tomato sauce
  • 1 - 12 oz. can chopped tomatoes with juice
  • 4 garlic cloves (rough chopped)
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1/2 tsp. rosemary
  • salt and pepper to taste
  • 1 lb. cooked egg noodles
  • 3 TB. italian parsley
  • fresh grated parmesean cheese for garnish
  1. Heat olive oil in roaster pan or large dutch oven.
  2. Rub meat on all sides with salt and pepper.
  3. Brown meat on all sides in the olive oil.
  4. Remove meat and set aside.
  5. In same pan saute garlic.
  6. De-glaze pan with 1 can of beef broth.
  7. Using a whisk blend in the tomato paste into the broth.
  8. Add onion, carrots, giardinerra, tomato sauce, chopped tomato, rest of beef broth, all seasonings and salt and pepper.  Stir to coat vegetables with broth mixture.
  9. Cook on low on stove for about 5 minutes. 
  10. Add the beef roast to pan, parting vegetables down the middle.
  11. Put roast and vegies in a pre-heated oven ( 250 degress convection roast oven) uncovered until internal temp. of roast reaches 135 degrees (about 1 hour).
  12. Take pan out of oven and remove the roast only and place it on a cutting board.  Cover roast with aluminum foil and let sit about 5 minutes.
  13. In the meantime you can be cooking the noodles.  Cook noodles al-dente.  Drain and mix with olive oil and italian parsley.
  14. Place noodles in a large bowl/ platter.  Pour 3/4 of the sauce and vegetables over the noodles and stir.
  15. Slice the beef into 1/4 in. slices.  Place beef slices over the noodles. 
  16. Pour the remaining sauce and vegies over the beef.
  17. Garnish with fresh grated parmesean cheese.
  18. Serve with crusty bread.
* could also serve this over mashed potatoes.
