HAPPY 4TH OF JULY!!!

Nothing says July 4th in the good ol' USA as good as a cherry pie does.  So I have "one upped" the cherry pie and have created Individual Cherry Cheesecake Cobbler Pies!  Ok...say that three times fast.  These individual desserts are to die for!  The are the perfect combination of cherry pie, cheesecake and cherry cobbler.  Place a nice big scoop of vanilla ice-cream on top and you have got a killer dessert.  I am telling you, even people who don't like dessert loved these when I made them.  To make it super simple for yourself purchase pre-made pie crust instead of making your own....that will really save you a lot of time.  Try this dessert for your 4th of July celebration...they will be the hit of the party!!!


INDIVIDUAL CHERRY CHEESECAKE COBBLER PIES 

*Makes about 10 individual pies.
  • 2 - prepared pie crusts
  • 2 - packages cream cheese softened
  • 1 cup brown sugar, divided
  • 2 eggs
  • 2 - 21 oz. cherry pie filling
  • 2/3 cup flour
  • 1 tsp. cinnamon
  • 2/3 cup quick cooking oats
  • 1 stick butter
  • miniture quiche/tart pans
  1. Roll out pie dough and cut out discs of dough so that each disc is 1 inch larger in diameter than the tart pans.
  2. Place pie dough discs into individual tart pans and form them around edges and bottom.
  3. In a large bowl mix cream cheese and 1/2 cup brown sugar with an electric mixer until well blended.  Blend in eggs.
  4. Pour cream cheese mixture into pastry shells in tart pans.
  5. Top cream cheese mixture with cherry pie filling - about 1/4 to 1/2 cup per pie shell.
  6. Mix flour, oats, remaining brown sugar and cinnamon in a medium bowl.  Cut in butter until mixture resembles course crumbs.  Spoon crumble mixture over cherry pie filling.
  7. Place all tart pans on a baking sheet.
  8. Bake at 375 degrees for about 30 to 40 minutes or until lightly browned and bubble.
  9. Remove from oven and cool on wire racks.  When completely cool remove bottoms and sides of tart pans.
  10. Serve indivuidual pies with scoops of vanilla ice-cream or fresh whipped cream.
