*Makes about 10 individual pies.
- 2 - prepared pie crusts
- 2 - packages cream cheese softened
- 1 cup brown sugar, divided
- 2 eggs
- 2 - 21 oz. cherry pie filling
- 2/3 cup flour
- 1 tsp. cinnamon
- 2/3 cup quick cooking oats
- 1 stick butter
- miniture quiche/tart pans
- Roll out pie dough and cut out discs of dough so that each disc is 1 inch larger in diameter than the tart pans.
- Place pie dough discs into individual tart pans and form them around edges and bottom.
- In a large bowl mix cream cheese and 1/2 cup brown sugar with an electric mixer until well blended. Blend in eggs.
- Pour cream cheese mixture into pastry shells in tart pans.
- Top cream cheese mixture with cherry pie filling - about 1/4 to 1/2 cup per pie shell.
- Mix flour, oats, remaining brown sugar and cinnamon in a medium bowl. Cut in butter until mixture resembles course crumbs. Spoon crumble mixture over cherry pie filling.
- Place all tart pans on a baking sheet.
- Bake at 375 degrees for about 30 to 40 minutes or until lightly browned and bubble.
- Remove from oven and cool on wire racks. When completely cool remove bottoms and sides of tart pans.
- Serve indivuidual pies with scoops of vanilla ice-cream or fresh whipped cream.
