Eggnog Teacakes


Eggnog Teacakes are the snowball of a Christmas cookie tray.  They not only taste great, but they look wonderful on a cookie tray.  The powder sugar on the teacakes makes them look like snowballs!  The hint of nutmeg and rum extract  gives you the flavor of eggnog.  They are very tasty!


EGGNOG TEACAKES 

*Makes about 4 dozen cookies
  • 1 cup butter, softened
  • 1 1/2 cups powdered sugar
  • 1 tsp. vanilla
  • 1/4 teaspoon rum extract
  • 2 1/3 cups all purpose flour
  • 3/4 teaspoon ground nutmeg 
  • 1/4 teaspoon salt
  • 1/3 cup chopped pecans
  1. Pre-heat oven to 350 degrees.
  2. Combine butter and 1 cup powdered sugar in a large mixing bowl.  Beat at medium speed, scraping bowl often, until creamy (about 1 to 2 minutes).
  3. Add vanilla and rum extract; beat until well mixed.
  4. Reduce speed to low. Add flour, nutmeg and salt; beat until just combined (about 1 to 2 minutes).
  5. The mixture will be dry and crumbly.  Stir in the peacans by hand
  6. Shape mixture into 1 inch balls.
  7. Place 1 inch apart onto ungreased cookie sheets.
  8. Bake for 13 - 15 minutes or until cookies are set.
  9. Cool on wire rack 10 minutes.
  10. While cookies are still warm, roll in powderd sugar.

  2. These too are really easy to make. They look so great on the cookie platter...like little snowballs. The eggnog flavor is subtle...your husband will love them!
