Peanut Butter Cup Cookies

Peanut Butter Cup Cookies are a must have on my Christmas cookie list for sure! Every year I have to put several of these cookies on the trays, not just one or two.  At first I thought it was all the kids that were eating them, but then I paid close attention and realized it was mostly the adults scarfin' these down.  They are very easy to make....alls you need is a mini muffin pan and some great ingredients!



PEANUT BUTTER CUP COOKIES 
  • 1 3/4 cup all purpose flour
  • 1 tsp. baking soda
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup shortening
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 2 TB. milk
  • 1 tsp. vanilla
  • 24 miniature peanut butter cups
  1. Pre-heat overn to 375 degrees
  2. Cream sugars and shortening together with a mixer.
  3. Add peanut butter and egg - mix well
  4. Mix in milk and vanilla with dry ingredients alternately.
  5. Press rounded tablespoons of dough into an ungreased mini muffin pan.
  6. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

  2. These cookies are so easy to make! Just make sure you don't fill the mini muffin tins too full otherwise the "lip" of the cookie goes over the sides too much and they will break when you try to take them out of the tin. Enjoy!
